Vola Barolo Vermouth

Vermouth is not a wine. It is wine based but it undergoes so many additions and manipulations that it ceases to be recognizable as the product of the vine. Vermouth is flavored with herbs and flavoring that includes hyssop, quinine, coriander, juniper, cloves, chamomile, orange peel and sometimes even rose petals. These flavorings are macerated and steeped in alcohol. Sometimes it is even heated to extract all the flavorings of the herbs and additives as you would in making tea. When the alcohol is fully flavored it is added to the sweet or dry wine. It is then allowed to age in large tanks for several months before bottling and shipping. Sweet Red Vermouth, generall called Italian vermouth is made from red wine and sweetened with sugar. Usually consumed as an aperitif though it is primary in the making of a "Manhattan" cocktail.
