Caviar Box

The perfect accessory for making caviar pearls! You will be able to produce 96 drops at once!

1. Using your favorite recipe for caviar pearls, fill the bottom of the reservoir with the Algizoon solution.
2. Connect one end of the plastic tube to the port on the end of the Caviar Box 96.
3. Connect the other end of the plastic tube to the included syringe, making sure that the plunger is down.
4. Place the Pipette tray onto the reservoir so that it fits securely.
5. Draw back the plunger of the syringe until each pipette is to the top, but not so much that it fills the chamber above
6. Lift the pipette tray off the reservoir, and hold it above the Calazoon solution.
7. Depress the plunger of the syringe slowly and steadily until all of the liquid has expelled from the pipettes, and the small drops form caviar pearls in the Calazoon solution.
8. Once the pearls are set, rinse with clean water, and reserve until needed. (It is helpful to store the pearls in the liquid or juice that they were made from in order to sustain the color)
9. Serve the pearls in cocktails, on deserts, or as a savory element in your finished dish.
