Description
One of the best-kept secrets, (why? - I do not know), this trimmed, Brisket Deckel is a VERY tender and succulent cut. A whole brisket (typically around 13 lb.) consists of 3 parts: 1. The 1st Cut Brisket, which is the large bottom layer (approx. 7-8 lb.); 2. The Deckel, which is a smaller top layer (approx. 2-3 lb.) covering only about one third of the large 1st Cut bottom layer, and; 3. A thick layer of fat between the 1st Cut and the Deckel. The Deckel is typically a well-marbled cut which we trim. It is also a lot more moist than the 1st Cut and is typically somewhat stringy. For this reason, it is often used for Pulled Barbecue after it has been boiled or slow-cooked in a crock pot. It is a great substitute for a 1st Cut Brisket but is somewhat more fatty because of its marbling. It is also a LOT LESS EXPENSIVE than a 1st Cut Black Angus Brisket and is prepared identically.
